Maison Fossier is the heir of a long line of makers of delicacies for which Reims is reknowned and has succeeded in conserving and developing the creative mastery which has made its biscuit recipes indispensable for gourmets. Maison Fossier, a traditional biscuit-maker forged by two-and-a-half centuries of history, combines the good tastes of past times with today’s flavours to delight all gourmets and biscuit-lovers.
Created in 1691, the Biscuit Rose de Reims is one of the stars of the town of Reims. Always associated with champagne in past times, it is a symbol of celebration. Today, it is also used in numerous recipes. In addition to its pink colour, it has a characteristic crunchy and fondant texture. Its weight is traditionnally 100g per dozen.
The Salé de Reims was specially created to accompany champagne at the aperitif. Fossier’s Master Bakers followed the advice of oenologists so that this butter puff pastry biscuit respects the subtil flavours of champagne. The Salé de Reims initially has a light taste of cheese, followed by a more persistant note of yeast. Very lightly salted, it conserves nevertheless a sweet touch brought by its fine line of Biscuit Rose powder.
